My daughter Karen wanted our Blueberry Cinnamon Rolls for Christmas morning... spiked with Amarula! Here you go Karen... a recipe I have used and adapted for over 30 years!

Basic Ingredients:

dough:

3/8 cup mashed potatoes
3 - 3 1/4 cups bread flour
3/8 cup sugar
1/4 cup butter
3/4 cup milk or water
1 egg
1 packet yeast
1 tsp salt

interior filling:

1/4 tsp cardamom
1 tsp cinnamon
1 tablespoons cream
1 1/2 tablespoon Amarula
1 1/2 tablespoons butter
1 1/2 cups brown sugar
1 cup dried blueberries
1 cup white raisins (Sultanas)
1/2 cup diced walnuts

icing:

confectioner's sugar as needed
with Amarula


Steps:

Step 1 - mix sugar, water, yeast and mashed potatoes and allow to rest in a warm spot near the stove for an hour or so

Step 2- Combine the interior filling components and set aside for later

Step 3 - Gradually mix in wet ingredients (butter, eggs and salt)

Step 4 - slowly stir in remaining flour

Step 5 - Knead dough until  even and elastic

Step 6 -  roll into a 12 inch square.

Step 7 -- spread filling to within a thumbs width of edge

Step 8 - roll up square

Step 9 -- cut square into 8 - 9 pieces

Step 10 -- Place into a 9 x 9 pan, allow to raise until double

Step 10 - Bake at 350 degrees for 40 minutes.

Drizzle with Confectioners sugar (icing) made with Amarula
