Every family has favorite recipes be they
from standard cookbooks, or in the case of
these wonderful stuffed bell peppers,
handed down from generation to generation
(Johnson to Sievers to Freberg).Each
Generation has added their own special
mark on our family's recipes and here's mine!
This is a wonderful midday meal
serving 6!

And as you can see only 312 calories
per serving and 13 grams of fat!

Ingredients: 6 green bell
peppers
5 cups boiling water
1 lb ground beef
3/4 lbs bacon
1 white sweet onion
3 teaspoons minced garlic
Salt & pepper to taste
1 cup cooked rice
1 1/2 cups chicken stock
1 can (15 oz) tomato sauce ( plus 2 tsp sugar)
spices:
1/2 teaspoon basil
1/4 teaspoon rosemary
1/4 teaspoon thyme
1/2 teaspoon oregano
dill

Step by Step

STEP 1
Cut off the tops of your peppers
and thoroughly
remove the seeds and fiber from the interiors.

STEP 2
Place your peppers two at a time
into
boiling water for about 5 minutes

STEP 3
remove your peppers and place top
down to drain
|

Meanwhile:
You have accomplished the
following:
STEP 1
RICE: place 1/2 cup of long
grain rice into rice
cooker along with 1 1/2 cups chicken stock

STEP 2
Sautee your beef and diced bacon
until
cooked. Remove bacon meat from pan and
insert onions and garlic into the bacon
fat and continue to cook until the onions
are transparent.

STEP 3
add bacon and beef combination to
the
vegetables and simmer, adding a bit
more than 1/2 of the tomato sauce
|

STEP 4
Pour meat mixture into large bowl
and
add cooked rice
|
 |
STEP 5
Place the beef, bacon and vegetable
mixture into the bell peppers and cover
with the remaining tomato sauce!
STEP 6
Place in high sided baking pan,
cover with
foil or dish cover and cook for 45-60 minutes at
350 degrees
STEP 7
Remove foil/cover for last 15 minutes
of cooking
